About the Authors

shapeimage_5 E llen Fitzsimmons worked as an adult educator for over thirty years. Her first job was as a county extension home economist with the University of Wisconsin-Extension where  her work focused on community based nutrition education.  She then  provided state-wide administrative leadership for nutrition programs for limited resource families and  became the State Program Leader for Family Living programs in 1990.   She later worked in senior management as the Associate Dean for Cooperative Extension and the Interim Vice-Chancellor and Provost for University of Wisconsin-Extension.  In 2006, she retired and decided to complete The Intolerant Family Cookbook, a project she had worked on in her free time for several years.  Her degrees are from the University of Wisconsin-Madison in home economics education (B.S 1971), education (M.S 1974) and higher education administration (PhD. 1981).  She and her husband, Allyn Lepeska, have three adult children, four grandchildren and live in Madison, Wisconsin and Dallas, Texas.

shapeimage_4 M olly Lepeska lives the gezellig life in Amsterdam, the Netherlands with her husband Gregg, son Gus, and twins Sam and Luna. She works in health communications, currently as a communications coordinator for an international AIDS NGO.  Molly graduated from the University of Texas at Austin in 1999 with a degree in Radio-Television-Film and received her master¹s degree in life science communications from the University of Wisconsin-Madison in 2003.   Her professional experiences have taken her from the US House of Representatives, to small television production company focusing on women¹s health and life issues programs, from state environmental education to ATM companies.
